Everything I needed to know I learned at sake tastings

Well, almost…

Every spring – and again every fall – it is tasting season here in Japan. What that means is Tasting, tasting, tasting...that those in the industry get to go out to three to five tastings a week of literally hundreds of sake. It is, without a doubt, way too much of a good thing. It’s really about as much fun as an icepick in the forehead. But it is for sure invaluable experience.

However, the countless sake available to taste and re-taste and take notes on are not the primary appeal.

What is far more important is what can be learned by talking to the brewers in attendance.

Sure, the brewers in attendance are the same ones as always. At this tasting, you will see so-and-so and whatsisface, but at that tasting you will see whodoyacallit and that other guy. Sometimes so-and-so will be at both tasting A and B, so I will strategically plan the order of tasting so as to maximize efficiency.

Of course it is fun to greet everyone; for some of the brewers from the boonies, it is the only time I see them. But what is more important and valuable is the information I can gather. Now that is where the real education is to be had!

For example, some of the problems plaguing the industry now include rice shortages and proper labeling. The very first booth at which I stopped is a kura with a famous female toji and that is not a million miles away from Iwate. Her labels all said “Domestic rice,” but nothing more about the variety. So naturally, I had to ask her: are you hiding the rice type?

“Nah, of course not. We’re not hiding it. It’s…” and told me a bit about the rice. So, I pressed onward, why don’t you list the rice on the label, then?

Tasting, tasting, tasting...“Because,” she continued in a matter-of-fact manner, “with all these rice shortages these days, if we cannot get all of what we ordered, we would be forced to use another rice to finish it off. That would mean we would have to reprint all of our labels to show that. We, as a small company, cannot absorb that hassle, so we avoid it altogether by just writing “domestic” on the label. But we are not hiding it! Just saving ourselves some trouble.”

Her decision – and that of others kura doing similar things – has been affected by a handful of mislabeling cases over the last two years. A couple of unscrupulous brewers have gotten busted labeling lower grades of sake as ginjo, or added-alcohol sake as junmai-shu. Some said it was an accident; at least one admitted to the wrongdoing.

In truth, it is but a few bad eggs doing that. But the potential loss of trust of an already-hurting industry, not to mention the potential loss of reputation for a good brewery, have made many companies extremely careful about anything that goes on the label. Not impossible to understand, actually.

Another brewer I know well was all smiles. “This year, we got all the rice we ordered, and Sake Competition 2012it dissolved properly for us. All is well in my sake-world this year! Rice shortages are passed on to brewers by the distributors providing less than what was fully ordered ten months previous to harvest. It is the only fair way to handle it – decrease all orders across the board, evenly distributing the pain. But this year, this kura at least got it all.

When the weather is too hot, the rice is too hard and will not dissolve in the tank, which means tight and restrained flavors. But this year, it behaved for him, and the sake flavors were full and expressive.

Yet another brewer that is geographically close to the one above was less ebullient. In fact, we was all gripes.

“Yeah, what we got fermented OK, but we did not get all we ordered. And this rice shortage is not about to end. We have the land, and the government regulations have changed to let us grow more, but we do not have enough seeds, and those farmers that grow it are graying fast – no young people want to get into rice farming now.”

Because the seeds must remain pure and can easily be affected by the rice growing nearby, or by what was growing in the same field the previous year, the seeds must come from the agricultural co-op if they are to be inspected. And if the rice is not inspected, rice cannot be labeled as premium. A racket? Sure, to some degree. But not one without its merits or its logic.

He also explained (but asked me to keep it quiet, which is why I am not mentioning the prefecture name) that the whole prefecture lost ten percent of their sake rice since some dork farmer accidentally mixed two rice types before inspection. That means the brewers cannot legally put the name of the rice on the bottle, and if they have two types mixed up in there, it will not likely behave in any way they have yet experienced. So for all intents and purposes, it was lost, further affecting their shortages.

I also found out, much to my surprise, that the powers that be can in fact analyze the DNA of a rice, to be sure that it is what a brewer says it is.

There were lots of other interesting things as well, beyond rice woes.

I continued to run into new rice types, like Tomo no Kaori from Toyama, and new yeasts such as Yuko no Omoi from Iwate that seemed fairly subdued, rather than bold, which was a very refreshing change (the concept, not the sake; although that was refreshing too). I found many more breweries using kensanmai, or rice sourced within the prefecture. While this is likely a result of attempts to ensure supply, it is also a great thing for many other reasons, and seems to be a fairly positive nascent trend.

Then there were a couple of technical things as well. One brewer, Gassan, had a whole new lineup in terms of flavors and style. The reason, interestingly, was that they changed their water source. The water from their own well is extremely soft water, and does not ferment very vigorously. So for decades they have been blending that with hard water brought in from a nearby source. And their sake has long been very enjoyable.

But they decided to bring it all back home, and from this season all of their sake is made with their own water, and in such a way that makes the most of the soft water. So, yeah, the entire lineup is new. It has led to a fascinating change.

There was much more, a lot of it fairly technical and isolated to the respective breweries.

And I tasted some good sake too! But walking around and chatting as we tasted was, as usual, even more interesting than the actual sake itself. And I can’t wait until the fall, where there will more of what is already too much of a good thing.

Announcing the Sake Professional Course in Chicago, August 12 – 14, 2014

To be held at Sunda Restaurant in Chicago Illinois, August 12 – 14, 2014

From Tuesday, August 12 through Thursday, August 14, 2014, I will hold the 15th JG_SPC-3stateside version of the Sake Professional Course at Sunda restaurant in downtown Chicago. The content of this intensive sake course will be identical to that of the Sake Professional Course held each January in Japan, with the exception of visiting sake breweries. The course is recognized by the Sake Education Council, and those that complete it will be qualified to take the exam for Certified Sake Specialist, which will be offered on the evening of the last day of the course.

JG_SPC-11The course is geared toward industry professionals wishing to expand their horizons in a thorough manner into the world of sake, and will therefore be somewhat technical in nature, and admittedly somewhat intense. It is likely more than the average consumer needs! But the course is open to anyone with an interest and sake and will certainly be enjoyable. The course lectures and tasting will begin with the utter basics, and will thoroughly progress through and cover everything related to sake. There will be an emphasis on empirical experience, with plenty of exposure to a wide range of sake in the tasting sessions throughout the three days. Each of the three days will provide the environment for a focused, intense and concerted training period.

SPC JGThe goal of this course is that “no sake stone remains left unturned,” and my motto is “exceed expectations for the course.” Every conceivable sake-related topic will be covered, and each lecture will be complimented and augmented by a relevant tasting session. Participants will not simply hear about differences based on rice types or yeast types, they will taste and smell them. Students will not only absorb technical data about yamahai, kimoto, nama genshu, aged sake and regionality, they will absorb the pertinent flavors and aromas within the related sake as well. Participants will taste over 80 sake within five focused tasting exercises across the three days.

Also, as mentioned above, an exam is given at the end of the course for those that choose to seek certification. Those that pass receive a   “Level I Sake Specialist” certification from the non-profit organization The Sake Education Council.

Koshiki-taoshi and Kaizo – the light at the end of the sake-brewing tunnel

It was well into the evening when the phone rang, but my caller i.d. told me the call was Mixing Moromi - soon to be done for the yearfrom a brewer in Akita Prefecture. Since he fits into both the friend and business associate categories, I picked it up.

“Du-hu-hu-hu-de. I’m pretty ha-a-a-a-mmered.” Not your typical call from the owner of a prestigious sake brewery, to say the least.

And to what do I owe this honor? Surely there must be a reason you have called at this hour and in this, er, state?

Indeed, indeed. Today was ‘kaizo.’ It’s over. We are done for the season.

That’s it. Kaput! All we have to do is clean up and we are outta here until the fall.” He seemed to momentarily forget he lived in the old house attached to the kura. “And, thanks to your support,” he continued with typical Japanese uber-humility, “we managed to finish the brewing season this year without any major difficulties.” I was fairly sure I myself had nothing to do with that, and of course politely deferred.

“Wow,” I responded. “That’s great. Congratulations. Another season down! I am sure you are relieved, and I am just as sure your sake will be kick-ass again this year.”

Pasteurizer - soon this is all that will remain to be doneThe true reason behind their call, driven though it was by the unbridled exuberance of the “kaizou” party, was to thank me for a positive assessment of a new sake they came out with that I was fortunate enough to have been able to taste several days earlier. I had recently ran into the two of them by coincidence, armed with a bottle, at a sake pub the night before a big Tokyo tasting. Regardless, it was great fun to hear from them, and congratulate them on completing the season.

“Hold on. There is someone here that wants to talk to you.” The cell phone got dropped at least twice and bashed into something made of glass on its way to whomever it was destined. Things like that happen in a room full of happy, buzzed sake brewers. Actually, I knew who it was going to be before I even heard the familiar voice.

“Du-hu-hu-hu-de. I’m pretty hammered too-hu-hu-hu.” It was the relatively young toji (master brewer) at that kura. “We made it through yet another season. And thanks to your support, we finished without a hitch…”

It was fun to hear from them, late though it might have been, and they certainly deserved to celebrate.

As many readers certainly recall, sake brewing runs roughly from the fall until the spring. Just when a kura begins to brew sake and when they finish for the year depends on a number of factors, including of course how much they brew. On top of this, dynamics including the number of brewers, number of tanks, size of the batches, how old or new their equipment is, and how often they fire up a new batch will all combine to determine just when they start and end. But typically it runs from mid-October to mid-April.

As the season draws to a close, there are two significant days that the people in the brewery owners and brewers together will celebrate. One is called “koshiki-taoshi,” the other is “kaizou.”

“Koshiki-taoshi” means “overturning the rice steaming vat.” A koshiki is the large vat in which rice is steamed every morning or so. In days of olde, the koshiki was made of wood (sugi, i.e. cryptomeria) and sat on top of a large iron cauldron of water (called a wagama) that tapers at the top.

Today only a handful of kura use wooden koshiki anymore. The craftsmen to make them are also all but gone. Most are steel these days, and in fact, many are fully automatic. Long ago, when the last vat of rice had been steamed, the koshiki would be turned over onto its side, cleaned thoroughly, and left to dry and be put into storage until next season. This is the term to which koshiki-taoshi refers.

When the last batch of rice has been steamed for the year, the brewers can see the light at the end of the brewing-season’s tunnel, hence the celebratory nature of the day.

Of course, that last day’s vat of rice will then be added to the last tank still fermenting, and after that there is still three weeks or more of waiting for those last few batches to finish fermenting, and then be pressed and sent to mature for a while. So their work is far from done. Koshiki-taoshi means only that there is no more rice to be steamed. Within two days, there will be no more koji to be made, and soon after that it is simply a matter of waiting. They know they are getting close to the end of six months or more of long, hard days.

Often in these modern times, automated koshiki are equipped in such a way that they can Wooden Koshiki on its sidebe turned sideways to make it easier to scoop out the rice. Kinda makes knocking them over a bit anticlimactic. Also, large brewers have continuous rice steamers, large contraptions that steam rice as it moves along on a mesh conveyor belt over steam, and constantly crank it out. So at such places there is no koshiki to knock over. But nonetheless, a ceremony and small party are held to acknowledge the significance of the last steaming of the season.

The next milestone is “kaizo.” “Kaizo” is written with characters that mean “all (has been) made,” and naturally enough indicates the day on which the last tank has been pressed, and therefore all the sake for the year has been brewed. All there is left to do is to sweep up, tidy up, and pack up.

After one or the other – or perhaps even both – of these significant days, the brewers and other employees of a sake brewery will often have a little bash in the kura. The kuramoto (brewery owner) will prepare a nice dinner, there will be warm toasts to each other, and there will be plenty of sake consumed. Also, newly made sake is offered to the gods in thanks for the blessings of the brewing season.

While, from what I have heard, it is more common to have this little party after koshiki-taoshi, obviously the folks at some places (like my friend in the intro) wait until kaizo, when presumably they can sleep late the next day.

Back in the 1960s when several of the larger kura rode continued growth to mammoth-hood, they began to brew all year round, in what is called “shiki-jozo,” or “four-season brewing.” However, as sake consumption has dropped off, especially that of cheap sake, the need for year-round brewing has dropped off, and none of the big brewers are doing this any longer.

But interestingly, there are a handful of smaller brewers that brew basically all Koji-making year, freezing the rice for use in the summer, and brewing at a more manageable, mellow pace. This pace might be starting a batch once or twice a week rather than everey day. Just when these places celebrate koshiki-taoshi is not clear. But I am sure they work it in somewhere!

Rice Woes

Of all the problems the sake industry faces – sake has dropped to eight percent of all alcohol consumed in Japan – a shortage of sake rice is not one that they need at this point in time. But it is one they must now deal with.

Several brewers I have spoken with have prefaced their comments about the coming year with,” If we can get the rice. But I think we will be OK.”

As most readers surely remember, sake rice is different from table rice in many ways, including size, higher starch content, lower fat/protein content, and a physical structure that places the starch in the center. That last point allows producers to mill it more and more, thereby grinding away more of the outside and remove more fat and protein, leaving only the starch behind. And sake rice costs much more too – as much as two to three times more than some table rice.

Table rice can, in fact, be used to make sake. But premium sake can be much more easily made to be wonderful when sake rice is used. Actually, perhaps 75 percent of all sake is not made using sake rice, but instead using table rice. Still, sake rice is indispensable to making great sake for sure. And sake rice is an official and separate classification, not just a nickname.

But recently, the government has been trying to reduce the number of fields on which rice is grown in an effort to stabilize the price of table rice on the market. As a part of that policy they have thrown sake rice in with table rice in terms support and subsidies for things like fertilizer and insecticides.

While that is all fine and good, the real truth of it all is that yields for table rice are much higher than sake rice. And if a farmer is going to get no more help on sake rice than table rice, there is a lot more money to be made on rice with higher yields per field. As such, most farmers then go for the most economically sound decision for themselves.

Certainly there are those that grow sake rice by direct, mutually agreed upon contracts. But the majority of it goes through the standard channels of agricultural co-ops.

So in the end, brewers are running into shortages of Yamada Nishiki and other sake rice types as a direct result of these policies. Note, too, that this goes against the current efforts of at least three government ministries that are trying hard to increase exports of sake around the world. Apparently, these policies are being reviewed in search of a solution.

Rice, inspected, bought through a co-op

As one concrete example, I ran into the toji of a kura from Yamaguchi Prefecture, the makers of Kahori-tsuru at a recent industry tasting. They, and another brewer down there whose sake I like, use a sake rice called Saito no Shizuku (“Droplets of the Western City”) in some of their products. I am fond of it, and struck up a conversation with him that began with me expressing as much.

“Yeah, I like it too, and I like using it,” be started off, “but I can’t hardly get the stuff!” He continued to explain that, as great as it is to have a local sake rice that supports local economy and regionality, it was like pulling teeth to get a farmer to grow it.

“They have choices, of course, about what they grow. And the market price for this particular rice is the same as that for Gohyakumangoku (a popular eating rice), but the yields for Saito no Shizuku are significantly less, you see.”

Again; we can surely understand the rice producer’s point of view as well. But it continues.

“But then, ‘course, there is the sake rice Yamada Nishiki. The yields for that are the same as Saito no Shizuku, but Yamada commands a much higher rice. So yeah, they’ll grow that. But not my Saito no Shizuku,” he lamented.

“Wow,” I commented. “I did not know that.”

“Yeah, neither did I!” he replied. “I realized I know far too little about how these things work, how they change, and how they will affect me.”

That last line is the one that amazed me. The system is complex and constantly changes, and the motivations of the players change along with that. I am sure that everyone is doing what they feel is best for the greater good. But it is opaque enough to adversely affect sake brewers unexpectedly and directly.

The 2014 Sake Professional Course in Japan will be held from Monday, January 20 to Friday, January 24, 2014. This is  it – the most comprehensive and intense sake educational program on the planet. October 1 is Sake Day! But…why?

Happy “Nihonshu no Hi,” or Sake Day!

October 1 of each year is officially designated “Nihonshu no Hi,” or “Sake Day.”

But why October 1? Why not April 1? Or May 20, or any one of 364 other valid days?

There are, not surprisingly, several reasons. However, the biggest reason is related to the written character for sake.Long ago, it consisted of only the right half of its current form; in other words, the original form of the character for sake did not include the three short lines on the left side, which, by the way, represent water, or at least liquid.

Rather, the original character for sake consisted only of the part that was made to look like a jar, indicating something holding liquid, which was of course an alcoholic beverage o

f some sort in the mind of those looking at the character.

Enter the Chinese zodiac: 12 animal signs that are traditionally used to number years in the traditionally accepted sequence. Long ago, by the way, it also was used to count two-hour periods in each 24-hour day.

The tenth of these is tori, or chicken (or perhaps rooster or cock). However, the written character assigned to each of these animals as used in the zodiac is not the standard characters used when referring to the animals in normal writing, but rather a special character and reading used only in these traditional Chinese zodiacal instances.

Also, one reading of this character is “toh,” which is a synonym for ten, a point that is of course tied in to the association of this particular character to the tenth hour, month and year in a cycle.

As with everything in the culture of sake, it is hardly random, yet hardly obvious. Therein lies its appeal.So, by fortuitous coincidence, the tenth year, hour and month, i.e. October are represented in the ancient Chinese zodiac system, also embraced by Japan, by the old character for sake. And, coincidentally, sake brewing begins in the fall, usually in October. And that is why the first day of the tenth month, October 1, is known as “Nihonshu no Hi,” or “Sake Day,” in Japan.

Traditional Fall Sake: Aki Agari and Hiya-Oroshi

Finally things are beginning to cool down as we move through nature’s most endearing season. Along with the rapidly turning leaves, cooler breezes, and better food, autumn is the traditional time when sake brewed the previous season goes on sale. Two types of sake you may come across in your autumnal perusing are aki-agari and hiya-oroshi.

Although sake is not usually aged for long, it is in general a bit too young to drink when the brewing season wraps up in the spring. Both the flavors and the fragrances are brash and sharp-edged, and a bit of time sitting quietly helps round out and deepen the sake.

Traditionally this was just about six months, and so the fall became the time when properly aged sake was released. Naturally, brewers often had to release some sake earlier to satisfy demand. But the connoisseurs knew that properly matured sake was well worth the wait. Sake released in the fall after the proper maturation period came to be known as aki-agari.

The only problem is that the term does not apply too well to modern times.

Fall still remains the traditional time for releasing sake, and this is the season with industry tastings galore. But in actuality maturation periods are far from uniform. Along with the advent of refrigeration came massive flexibility in terms of maturing sake.

These days, some brewers still only mature their sake six months or so, but others do so for a year or longer, and many at very low temperatures, to get just the profile they are looking for. Temperature affects the speed of changes during maturation, as does the choice of aging vessel (bottles or tanks). This allows brewers to tweak their flavor profiles, and maintain consistency throughout the year. But everyone does it a bit differently, and it makes the term aki-agari a tad less applicable.

Today, aki-agari refers in a broad sense to sake from the most recent batch released in the fall. You may see it at sake shops and department stores all across Japan.

Then, there is hiya-oroshi. The word hiya-oroshi has its origins back in the Edo period. Back then, finished sake was stored in the large cedar tanks used for brewing. Normally, this sake had been pasteurized once (by heating it for a short time) before being put in these tanks for maturation. If they needed to ship some out, they would have to pasteurize the sake a second time before putting it into small cedar casks – called taru – for delivery.

This is because the outdoor temperature was still high in the summer, which  would allow the sake to become warm enough where dormant enzymes could become activated, potentially sending the sake awry. A second pasteurization permanently deactivates these enzymes, removing that fear, but taking a bit of the zing of the sake along with it.

However, once it became cool enough in autumn, brewers could fill their taru from the storage tank without pasteurizing the sake, and ship it with no fear of it going bad. The lower temperatures of autumn ensured enzymes would not be activated. Such sake – sold in the fall without pasteurizing a second time before shipping – came to be known as hiya-oroshi.

Hiya-oroshi often has a bit more of a fresh, lively taste to it than other sake. While not as brash as freshly pressed sake, there can be a slightly youthful edge to it. Naturally, this varies greatly from sake to sake, and from kura to kura.

And, interestingly, some prefectures in Japan, most notably Nagano and Sago (although there are others) have set an official day for releasing hiya-oroshi, September 9. Naturally, this is not law, but just something the brewers have mutually agreed upon to add a bit of specialness to the event and the sake that it highlights.

What all this means is that now – right now – is the best time to try hiya-oroshi, and notes its slightly youthful touch, and the attendant appeal.

Yeasts that don’t foam up? Huh?

Non-foaming Yeasts

Admittedly, the subject of yeast types begins to push the envelope of geekdom. While some want to know both in theory and practice the difference between a Number 9 and a Number 10, and perhaps even between a CEL-24 and EK-1, most of us are content to sip and smile. Even so, there are some interesting historical, cultural and technical anecdotes surrounding even things as dryly scientific as yeast, and the topic of foamless yeasts, or “awanashi kobo,” is one such example.

First of all, just what is foamless yeast? Usually, when sake undergoes its 20- to 40-day fermentation, the foam rises in great swaths and falls again, especially over the first third or so of this period. In fact, brewers of olde would judge the stage, progress and condition of a given batch by the appearance (and smell, and taste, and even sound) of this foam atop the fermenting mash. Also, there are ten times more yeast cells in the foam than the mash itself, so very often yeast for subsequent batches is removed from the foam of healthy, vibrantly fermenting tanks.

So foamless yeasts, obviously, are strains of yeast that do create as much foam (there still is a little bit) as they convert sugars to alcohol, carbon dioxide, and more. The question is, why would anyone want to use them?

There are, actually, a number of very good reasons. Most of these are centered around efficiency, sanitation, labor-savings, and even safety. For instance, since the foam rises so high during fermentation, brewers cannot fill a tank to the brim with rice, koji and water since it would soon overflow with foam, leading to hygienic nightmare. Rather, they can only fill the tank initially about 3/4 of the way to leave room for the foam to rise and fall. Naturally, this puts a damper on one’s yields and efficiency. There may be 30 tanks in a fermentation room, but if you can only fill each up 3/4 of the way, your monthly yields are only 75 percent of what they might be. With foamless yeasts, however, this concern is all but a non-issue, and a brewery can get the higher yields out of each batch and tank.
Also, when foam does rise and fall, the remains that cling to the side of the tank are a veritable hotbed of bacterial activity, an orgy of undesirable microorganisms just hankerin’ to drop back in and do damage to the unsuspecting ambrosia-in-waiting below. So this must be assiduously cleaned off by the brewers. Not only is this hard and time consuming work, it is also quite dangerous, since it generally requires leaning into the tank. Falls into tanks are almost always fatal since there is no oxygen and the huge amount of carbon dioxide billowing up from the mash is harshly engulfing. So by eliminating the foamy remains, time, labor, and risk are spared. Finally, without all that gunk in the way, the hard-working yeast cells move and work a bit more freely, so that fermentation proceeds a smidgeon faster and can finish a day or two earlier.

Why are they foamless? What happens, it seems, is that most yeast cells will cling to bubbles of carbon dioxide that are created and then rise to the surface. Foamless yeast cells, on the other hand, for whatever reason do not cling to these bubbles and so are not carried up, up, and away. Since the bubbles are unencumbered, they pop, and there is no foam rising high above the mash.

The foamless yeasts that are commonly encountered out there today are non-foaming versions of the “usual suspects,” rather than being new, unknown, or total mutant life-forms.

Actually, they appear naturally and spontaneously. About one in every several hundred million yeast cells of a given type are foamless, but obviously, if just one in several hundred million is non-foaming, no one will notice. It just takes patience to isolate some and cultivate a pure culture of them.

Also, they have been around a long time, it seems, but proper records go back until only about 1916, when several breweries reported experiences with them. Apparently, until then, the brewers that encountered these thought, “Whoa. This can’t be right. Let’s just quietly throw this mutant away before anyone finds out about it. It could be bad for our rep and all.”

While foamless yeasts were used sparingly and experimentally for decades, the first commercial use of a foamless yeast was actually in Hawaii, believe it or not. In 1960 or 1961, a full ten years before it was used on anything remotely resembling a large scale in Japan, foamless yeasts were used by Takao Nihei of the Honolulu Sake Brewery. Dispatched by the brewing research organization within the government of Japan, he was the first to take what information there was on these yeasts (and a sample, of course) and run with it. His focus was saving labor and producing great sake with great efficiency, and this he did with great success.

Are these foamless yeasts really the same as their bubbling counterparts, except for the foam? Most brewers say, “Yes, the results are essentially same, and the practical advantages make it a clear choice for us.” However, there are a still a few hardcore toji who insist that the foamless manifestations are not quite as good as the foaming yeasts. Naturally, the ability to gather information from the appearance of the foam is eliminated. Still, most brewers feel that with foamless yeasts they get the same quality of sake, with less mess.

Foamless yeasts, at least those distributed by the Brewing Society of Japan, are designated by a -01 after the normal nomenclature. So a foamless Number 7 is known as 701, foamless Number 9 as 901, and so on. Those you are most likely to come across these days are 701, 901, and 1801.

Brewers are not obligated to provide information on the choice of yeast used, but often do. While there are countless yeasts used in sake today, just a few are non-foaming, and now you can recognize them.

Second Guessing Rice

Kanagawa, just below Tokyo, is not exactly a hotbed of hot brewers. Sure, there is good sake from amongst the prefecture’s comparatively scant 16 kura. But it is not a region most sake fans would gravitate toward when it comes to selecting recently hip sake. Then there is Tensei.

Tensei is made by Kumazawa Shuzo, a great example of what fresh, new, youthful thinking that is decidedly out of the box can do in turning around one company – and by extension – the industry.

Their story is a long-ish one, and best saved for its own limelight. But in order to inch our way back to the topic here, one of the ways Tensei got back on track was to start a club, a simple pre-sale of a tank of sake.

Those of us that have over the past 20 years supported Tensei will pay a modest sum for three bottles of sake. But we pay in advance, and give the toji total freedom to pull out all the stops. He will use the best rice, yeast and methods he can. And it usually goes very well. But since we have supported him by paying in advance, if it falls short, we have supported him with a lesson learned.

Most years it is great. But last year, i.e. the three bottles I got in June of 2012, were decidedly thinner, and the aromas were laced with what is called ethyl caproate, giving it a bit of apple but underpinned by a bitter layer. OK, fine, I thought. If he does not push the envelope once in a while, he will not get better.

And I drank ‘em. All three. They were fine, if not the rockin’ and interesting stuff I have come to expect from Tensei. I usually drink their junmai ginjo, and that has remained steady and unchanged, so no real problem.

And then came this year. I had subconsciously lowered my expectations for the club stuff. And when it arrived, I gave it the fair shot, full professional concentration applied. And, boy, did it rock. I mean, outstanding. “Hodo hodo” is the term in Japanese; just enough, but not too much. Just enough umami, maturity, breadth, aroma… I really found it great.
And as such wasted no time in emailing the toji to let him know as much. I simply expressed how balanced it was, compared to last year. He responded almost immediately.

Last year,” he began, “based on our initial findings, we expected the rice to dissolve quickly and thoroughly.” Each year, sake brewers begin the season with lower grades, partly to feel out the year’s rice. How did weather affect things? Will it dissolve quickly, leading to full flavors, or out-of-control rough ones if not reined in? Or will it resist dissolving, be hard, which could lead to not enough flavor and an overall tight profile unless coaxed into dissolving via higher moisture content and other methods.

“And so,” he continued, “we treated it as such, keeping the moisture in check so as to eliminate any overbearing or sloppy flavors in the final product. However, when we got to our top daiginjo, the rice did not cooperate. Hence the narrow flavor profile.” And this is why sake brewing is so challenging and interesting. One can have reams of data, but if the fickle micro-organisms and other elements do not feel like going along with that data, the result may go off on a tangent. Textbooks alone will simply not cut it.

“This year, he added, “it behaved as we expected, and everything worked like a charm. Hence the great balance, ideal level of fullness and umami, and as-predicted maturity.”
“Be sure,” he concluded, “to save one for at least six month. The real umami and richness will become even more apparent!” And so I will.

I think that rice is not considered to change much from year to year, when it fact, it does vary hugely. And these variations do have an effect on the final product from year to year. However, so much manhandling of the raw materials takes place after harvest that good craftsmen can and do smooth out these differences in favor of the year-to-year consistence that is, in fact, their goal.

Interestingly, most brewers cover these year-to-year changes on the fly. The sake in which they are most evident are sake from impossibly tiny brewers (which the brewery that makes Tensei is not) and one-off sake such as this club sake, or contest sake. It is harder to blend differences into oblivion, or tweak them away when working with little else to use in blending, or sake that changes from year to year.

Rice is awfully hard to second guess. Yes, it varies. And yes, good brewers can work with that variation. But no, it cannot be done based on rules or textbooks, at least not as well as it can be done via experience and intuition.

The Start of a New BY

Happy New (Brewing) Year! BY25 has begun.

While most sake is best young, sometimes sake is aged by the kura before being released. And sometimes, we can see an indication of the year in which it was brewed. This should make it all simpler – provided we know how to read that information. The problem stems from two points: one, Japan does not use the same dating system as the West, but rather a year-numbering system based on the reign of the current emperor, and two, a given sake brewing season stretches across two calendar years.
First of all, while Japan does relate to the fact that this is 2013, officially and traditionally it is called Heisei 25, or the 25th year of the era of Heisei. A bit of a mathematical hassle, especially when drinking, but not an insurmountable obstacle.

Next, sake brewing starts in the fall of one year and ends in the spring. So, if a sake were labeled only as year 25, we would not know if it was the season of Fall ’24 to Spring ’25, or Fall ’25 to Spring ’26. These are two different years as far as brewing is concerned, and can be likened to two totally different vintages in the wine world. So, we need a bit more detail.

This point did not escape the clever folks at the ministry of taxation, who also needed a more efficient way to tax kura on their output. And so long ago they came up with the concept of the “Brewing Year,” or BY. Just like fiscal years can differ from calendar years, in Japan the Brewing Year runs from July 1 to June 30th of the following year. This, then, encompasses the entire brewing season of every brewer in the country in one clean 12-month period.

So, BY24 (it might also appear 24BY) ran from July 1 2012 until June 30 2013. And sake brewed last fall and into this spring would be considered part of BY24. And, BY24 just ended a few days ago, when we entered into BY25. So, even though calendar year 25 (read: 2013) is half over, we just now started BY25.

How does this help you? Well, when you see a sake labeled, for example, BY23, you know that since Heisei 25 is 2013, this sake was brewed in the season beginning in the fall of 2011, and running into the spring of 2012. That would make it about a year and a half to two years old; not at all odd for a sake of maturity and richness in style.

 

 

Again, since aged sake is such a small drop in the bucket, you will rarely come across this. But if and when you see such mysterious nomenclature, you will know precisely how old your sake is.

What is happening in the brewing world itself…

Changing Sake Flavor Profiles
A survey by the Ministry of Taxation on sake flavor profiles for last year showed a couple of interesting trends.

In short, the trend for junmai-shu to be both drier and richer continued. For better or for worse, more intense junmai has become more popular. Also, in ginjo-shu, the alcohol content and amount of a compound called ethyl caproate (think “apples” in your ginjo) also increased. So brewers are taking the sake of those grades further into their archetypal manifestations. Overall acidity of premium sake stayed pretty much the sake, but the umami-yielding amino acid content dropped a bit. The sweet/dry and richness of non-junmai premium sake (basically ginjo-shu) also stayed the same.

While this may not be so useful in our everyday sake sipping endeavors, it is interesting to hover over and observe the changes and trends.

Special Clause 87 Extended Again
In January, the Ministry of Taxation again extended Special Clause 87 for a couple of years. As you all likely remember, SC87 gives tax breaks to smaller brewers, which means almost everybody, since the industry is so polarized.

How polarized? Out of 1260 breweries, about 15 make about 50% of the sake. About 1000 are very, very small.

The original clause gave a 30% break to these smaller brewers, and as it expired, the industry (well, most of it!) sought a permanent extension. The compromise was a 20% break for five more years (actually, it is a bit more complicated than that, but that is the gist). So the can has been kicked down the road a bit, but hopefully, over the next five years, profits will rise, and will not stand to lose the hundreds of brewers we might have lost this time, had it expired.

The harvest of Hyogo-Prefecture-grown Yamada Nishiki last year was down for a handful of reasons, and the impact is being felt throughout the industry.

The rice grown is sold to the Brewers Associations of the various prefectures, rather than to individual brewers. And Hyogo Prefecture has told at least a few prefectures that they would only get 88% of what they ordered.

It was indeed a less-than-copious harvest. But there are other reasons and rumors swirling about too. While keeping the homeboys of Hyogo and the most important customers happy before supplying those far away is certainly part of it, there is more. For example, one source told me (on condition of anonymity) that the Tohoku region sold a lot of sake fast after 3/11/11, and needed to outsource some of that from Western Japan, who then needed to replenish their stocks, hence driving demand for Yamada up. Another source said that Hyogo Prefecture tightened their standard for top-inspected-grade “Tokujo” Yamada Nishiki to raise the image of Hyogo-grown Yamada, thus lessening the supply of same. There are other interpretations as well.

In any event, this and the fact that there have been overall price increases on most rice this year means we may see an increase in sake prices come next fall.
