The End of the 2016 – 2017 Brewing Season: Koshiki-daoshi and Kaizo

It was well into the evening when the phone rang, but my caller i.d. told me the call was from the cell phone of the owner and presidente-for life of a kura with which I work closely. Since he fits into both the friend and business associate categories, I happily answered.

He began the conversation with the Japanese-language equivalent of, “Du-hu-hu-hu-de. I’m pretty ha-a-a-a-mmered.” Not your typical call from the owner of a prestigious sake brewery, to say the least.

And to what do I owe this honor? Surely there must be a reason you have called at this hour and in this, er, state?

“Indeed, indeed. Today was ‘kaizo.’ It’s over. We are done for this season. That’s it. Owari! All we have to do is clean up and we are so outta here until the fall.” He seemed to momentarily forget he lived in the old house attached to the kura. “And, thanks to your support,” he continued with typical Japanese uber-humility, “we managed to finish the brewing season this year without any major difficulties.” I was fairly sure I had nothing to do with that, and of course politely deferred.

“Wow,” I responded. “That’s great. Congratulations. Another season down! I am sure you are relieved, and I am just as sure your sake will be great again this year.”

“Hold on. There is someone here that wants to talk to you.” The cell
phone got dropped at least twice and bashed into something made of glass on its way to whomever it was destined. Things like that happen in a room full of happy, buzzed sake brewers. Actually, I knew who it was going to be before I even heard the familiar voice.

“Du-hu-hu-hu-de. I’m pretty hammered too-hu-hu-hu.” It was the relatively young toji (master brewer). “We made it through yet another season. And thanks to your support, we finished without a hitch.” Yeah, yeah.

The true reason behind their call, driven though it was by the unbridled exuberance of the evening’s “kaizo” celebration, party, was to thank me for a positive assessment of a new sake they came out with that I was fortunate enough to have been able to taste several days earlier. I had coincidentally ran into the two of them, armed with a bottle, at a sake pub the night before a big Tokyo tasting. Regardless, it was great fun to hear from them, and congratulate them on completing the season.

As many readers certainly recall, sake brewing runs roughly from the fall It all starts when this is harvested

until the spring. Just when a kura begins to brew sake and when they finish for the year depends on a number of factors, including of course how much they brew. On top of this, dynamics including the number of people actively working in the brewery, the number of tanks, size of the batches, how old or new their equipment is, and how often they start a batch will all combine to determine just when they start and end. But typically it runs from mid-October to mid-April.

As the season draws to a close, there are two significant days that the people in the brewery owners and brewers together will celebrate. One is called “koshiki-daoshi,” the other is “kaizou.”

“Koshiki-taoshi” refers to overturning the rice-steaming vat. The koshiki is the large vat in which rice is steamed every morning or so. Traditionally these were wooden, but rarely does one see that anymore. Most are steel these days, and in fact, many are fully automatic. Long ago, when the last vat of rice had been steamed, the koshiki would be turned on to its side, cleaned thoroughly, and left to dry and be put into storage until the next brewing season begins the next fall.

When the last batch of rice has been steamed for the year, and the koshiki has been knocked over for that final thorough cleaning, the brewers can see the light at the end of the brewing-season’s tunnel. Hence the the celebratory nature of the day.

Of course, that last day’s vat of rice will then be put into the last tank that is still fermenting, and after that there are still three weeks or more of waiting for that tank, and others still bubbling along, to finish fermenting, and then be pressed, filtered, pasteurized and sent to mature for a while. So even after koshiki-daoshi their work is far from done. Still, they know they are getting close to the end of six months or more of long, hard days.

“Kaizo,” on the other hand, is written with characters that mean “all (has been) made,” and naturally enough indicates the day on which the last tank has been completely finished, and therefore all the sake for the year has been brewed. All there is left to do is to sweep up, tidy up, and pack up.

Pour sakeAfter koshiki-daoshi, typically, the brewers and other employees of a sake brewery will often have a little bash in or nearby the kura. A nice dinner, warm toasts to each other, and plenty of sake. While, from what I have heard, it is more common to have this little party after koshiki-taoshi, obviously the folks at some places – such as those that called me in the story above – wait until kaizo, when presumably they can sleep late the next day.

Much has changed in the sake-brewing society, and while long ago the entire brewing staff lived in the brewery for the whole brewing season, which was six months or longer. Today, however, many (if not most) brewing personnel live close to the kura and commute. The significance of koshiki-daoshi and kaizo must have been much greater back then.
Nevertheless, both koshiki-daoshi and kaizo are culturally and historically important milestones in each kura’s brewing season.

Why would any brewer use a foaming yeast?

Why make it harder than it needs to be?

There are countless varieties of yeast used in sake brewing today. Yeast converts sugar (that has been created when enzymes in the koji break down starch in the rice) into alcohol. So, no yeast, no sake. But it does much, much more. But the most evident expression of yeast in sake is aroma. Basically, yeast yields aromas.

If you smell banana and melon in your sake, that comes from the yeast. If you smell apple and anise, that comes from the yeast. If you smell bacon and smoke, that comes from bad yeast.

Almost all brewers select and manually add the yeast of their choice for each sake. And, in a very few cases, yeast can drop in from the air and naturally occur. These can be categorized in a handful of ways, most usefully perhaps in terms of “classic” yeasts and “modern” yeasts, with the former giving more overall balance and the latter being more aromatic.

But another way to categorize yeast is “foaming” and “non-foaming.” The difference is just as the terms imply: foaming yeast froths up on the top of the fermenting mash, whereas non-foaming yeast does not. Other than that, they are pretty much the same.

Foaming yeast are much, much more common and were in fact the standard for centuries. Why are the foamless ones foamless? What happens, it seems, is that most yeast cells will cling to bubbles of carbon dioxide that are created and then rise to the surface. Foamless yeast cells, on the other hand, for whatever reason do not cling to these bubbles and so are not carried up, up, and away. Since the bubbles are unencumbered, they pop, and there is no foam rising high above the mash.

Many yeasts have both foaming and non-foaming manifestations. An organization called the Nihon Jozo Kyokai (Brewing society of Japan) distributes the lion’s share of sake yeast to the industry. The yeast varieties they distribute are numbered, as in number 6, 7, 9, 10, 14, and 18. These are the most commonly seen, although there are others. When a -01 is added, that indicates a foamless version. So 601 is a foamless 6, 701 is a foamless 7, and 901 is a foamless 9.

During production, the two types of yeast behave very differently.

For instance, since the foam rises in great swaths during fermentation, brewers cannot fill a fermentation tank to the top with ingredients when using a foaming yeast. If they did, the foam would overflow, taking yeast with it, and fermentation would peter out. Using a foamless yeast eliminates this problem, since there is no foam to overflow. So the brewers can fill the tank to the top from the beginning, and this means brewers can get about 25 percent more sake from each tank. That is significant.

Also, when foam does rise and fall, the remains that cling to the side of the tank are a veritable hotbed of bacterial activity, an orgy of undesirable microorganisms just hankerin’ to drop back in and do damage to the unsuspecting ambrosia-in-waiting below. So this must be assiduously cleaned off by the brewers. Not only is this hard and time consuming work, it can be dangerous. So by eliminating the foamy remains, time, labor, and risk are spared. Yet one more advantage of foamless yeast is that the yeast cells move and work a bit more freely, so that fermentation proceeds a smidgeon faster and can finish a day or two earlier.

So foamless yeast is faster, easier, and increases per-tank yields significantly. This naturally begs the question: why in the world would a brewer not use a foamless yeast?

In a word (or two): sensory input. Visual data. Insights that chemical measurements cannot provide.

I recently visited the brewer of Matsuo, Ryuta Tanaka, deep in the backwoods of mountainous Nagano prefecture. As we meandered through his kura, we eventually made it to the moto room, where all the yeast starters are created. Most sake here is made using a yeast known as Number 14, the non-foaming counterpart of which is 14-01.

“All of our sake is made using foaming yeast; 14-01 is fine, but I gotta have the foam,” he began. “Sure, I give up yields. Sure, it is more of a hassle. But this sake stuff has a life of its own; it doesn’t always proceed as expected. So the more info I can get, the better I can roll with it and guide it to end up as tasty.”

During the 20 to 35 day fermentation period, the surface of the mash will change daily. After a few days, the foam will appear, peaking at about the tenth to the twelfth day, and then slowly collapse and contract into a skin-like surface. Experience and intuition let a master brewer look at the foam on any day and know how healthy the yeast is, and what the sake will end up tasting like when done. Foamless yeasts, for all their benefits, do not offer nearly as much visual feedback as to how the fermentation is proceeding.

Tanaka-san continued. “With experience, it is amazing what I can tell from the appearance of the foam. F’rinstance, I can look at the foam on any given day and tell you what the nihonshu-do will be on the next day!” The nihonshu-do is the specific gravity, and it will tell the brewer how fast sugar is being produced and how fast it is being fermented. So it is a seminally important measurement to sake brewing.

“Usually, we have to measure that daily with a hydrometer; but I can eyeball it based on the foam,” he stated, obviously pleased with this. “That’s the way sake has always been made; brewers used their five senses to get the job done. They didn’t need no stinkin’ hydrometers!” While I admittedly took a bit of liberty with that translation, the gist was certainly the same.

Last month in this space we talked about sadistic sake fans. While their counterparts may exist in masochistic brewers, often the older, hassle-laden ways are, indeed, better. While there are certainly many opinions, increased sensory data is one reason for that.

Happy New (Brewing) Year! 28BY has begun.

Happy New Year! Happy New “Brewing” Year that is! Welcome to 28BY, or “The Year Heisei 28 Brewing Year.”

Suwa water fallsWe have calendar years that run from January 1 to December 31. And we have fiscal years that are more variable, but tend to run from April 1 of one year until March 31 of the next, especially in Japan. And, most relevant to us, we have Brewing Year, or Jozo Nendo, which runs from July 1 of one year until June 30 of the next. Here’s an explanation of why that exist as it does.

First of all, while Japan does relate to the fact that this is 2016, officially and traditionally it is called Heisei 28, or the 28th year of the era of Heisei. So to go from Heisei to western years, subtract 12 – this will work well most of the time. A bit of a mathematical hassle, especially when drinking, but not an insurmountable obstacle.

While most sake is best young, sometimes sake is aged by the kura before being released. And sometimes, we can see an indication of the year in which it was brewed. This should make it all simpler – provided we know how to read that information. The problem is that a given sake brewing season stretches across two calendar years.

Sake brewing starts in the fall of one year and ends in the spring of the next. So, if a sake were labeled only as year Heisei 27 (2015), it would be brewed in one given season if it were January of 2015, but be a completely different brewing season – with different rice, weather, and possibly even more – if it were October 2015. This difference could be likened to two totally different vintages in the wine world. So, we need a bit more detail.

needed a way to speak about the sake of one season, unencumbered by trivial details like how the rest of the world measures time. It also was a Imada yamadanishiki 70/35necessity from the viewpoint of the folks at the ministry of taxation, who also needed a more efficient way to tax kura on their output.

And so long ago they came up with the concept of the “Brewing Year,” or BY. Just like fiscal years can differ from calendar years, in Japan the Brewing Year runs from July 1 to June 30th of the following year. This, then, encompasses the entire brewing season of every brewer in the country in one clean 12-month period.

So, BY27 ran from July 1 2015 until June 30 2016. And sake brewed last fall and into this spring would be considered part of BY27. And, BY27 and we have entered into BY28. So, even though calendar year 28 (read: 2016) is half over, we just now started BY28.

Why do they use July? Why not October 1 (Sake Day!) or another day in the fall when brewing begins? Well, consider that there are various scales of operation. A tiny brewery might begin in November and finish in February. More common is starting in October and finishing in April. A very large brewer might start as early as August and run until the next June. And there are even one or two that brew all twelve months of the year.

Yeast StarterSince production is focused on the coldest month of the year, January or so, brewing operations will expand in both directions from that point. So by starting in July and running to June, the industry can capture a single brewing season for all brewers, big or small. While it ain’t rocket science, it is at least somewhat clever.

How does this help us? Well, when we see a sake labeled, for example, 26BY, you know that since Heisei 26 is 2014, this sake was brewed in the season beginning in the fall of 2014, and running into the spring of 2015.
That would make it about a year to a year and a half since being brewed, just about right for much sake, if young by some mature sake standards.

Note, this is not on all bottles. It is common to talk about it with producers and other sake adherents, but the only time it is actually printed on a label is when the sake has been aged deliberately, and the brewer wants you to know just how long it has been aged. It is indispensable in those situations, since the date that must be printed in tiny characters in the corner of the label legally indicates about when it was shipped from the brewery, and that may not let us know just how long it was aged before that.

Again, since aged sake is such a small drop in the bucket, you will not see this so commonly. But if and when you see such mysterious nomenclature, you will know precisely how old your sake is.

Non-junmai Types: An Interesting Idea

From whence does the added alcohol come?

Yeast cellsIn recent years, the line between junmai-types vs. non-junnmai-types divide seems to be strengthening, in many senses. One such sense is sake style. Brewers that focus on junmai seem, at least to me, to be making the richer and fuller styles that junmai types can be, and those that make non-junmai, i.e. added-added alcohol types, seem to be making lighter, more aromatic and seamless sake styles that added alcohol affords.

While there is a lot of information out there on these two divisions of the sake market, here is a semi-brief synopsis. About 80 percent of all sake has pure distilled alcohol added to it just after fermentation. Water is later added to bring the alcohol back down, so it is not really fortified. When alcohol is not added the term junmai is put on the label.

So junmai-shu, junmai ginjo-shu and junmai daiginjo-shu are the three premium types of rice-only sake. Honjozo-shu, ginjo-shu and daiginjgo-shu are the three types of added alcohol premium sake. For the 65 percent of the market that is non-premium sake, this addition of alcohol done for economic reasons. For the 15 percent of the market that is premium and non-junmai (honjozo, ginjo-shu and daiginjgo-shu), this added alcohol is done for good technical reasons: it helps extract flavor and aromas, and predisposes the sake to time in the bottle.

In recent years, the junmai types have grown in popularity, but the non-junmai types have been a bit maligned, unfairly so in the opinion of many, myself included. Those that are anti-added-alcohol say they can taste it, it gives them a hangover, it is somehow cheating, and other unfounded arguments. While a rant is not the aim of this article, the topic is one about which many in Japan feel passionate.

However, interestingly, in blind tastings many ostensibly dedicated junmai fans will choose non-junmai sake over junmai sake. This I have seen again and again. But like I said, this is not intended to be a rant.

Rice only sake = junmai-shuBeyond the untenable arguments above, though, there are a couple of valid positions. Namely, whether or not sake is made from rice, and whether or not the ingredients are domestically sourced. For example, brewers must list on the label the source of rice. They are permitted to use imported rice (very, very few do, and only for very, very cheap sake), but in the ingredients list it must say “domestic rice” or “imported rice.” The same stipulation is not, however, applied to added alcohol.

Almost without exception, the alcohol used when making non-junmai sake is roughly distilled from sugar cane, imported into Japan, and then distilled again for purity. By the time it gets to the brewers it is pure ethyl alcohol, blended with water for safety reasons. So it is not made from rice, and it is not from Japan. To have a product like sake – the national drink of Japan – which is known as a rice-based product – be made with something other than rice, and other than Japan-based ingredients can be a sore point with some folks.

Again; not me. I enjoy sake completely unfettered from such concerns. Perhaps I am just a hedonistic simpleton. But I digress.

So yes, junmai types are growing in popularity in Japan, but so is an understanding of the very positive aspects of added alcohol sake.

And related to all of this: I recently saw in an industry publication a very interesting idea that has arisen of late.

In order to make premium sake, inspected rice must be used. Inspection ensures certain levels of quality in the rice, which will vary from rice to rice. And in any event, rice in general is just expensive in Japan.

But what if the alcohol used for making non-junmai were to be distilled from really, really cheap rice – broken stuff or rice that did not pass inspection. Again, since it is taken down to being pure ethyl alcohol, the quality of the original rice should not matter.

Surely this is more expensive than sugar-cane based alcohol. But the other side of the coin is that by using this, the entire product can be rice based, and one hundred percent domestic. Surely this will help the agricultural sector as well, since even schlock rice has a use.

What I am curious about is, if premium sake were to be made using added alcohol, but that alcohol was tobinirimade from domestic rice, would the junmai jihadists concur on its validity as sake? Certainly the quality would be there, or at least, there is no technical reason it would not be so. If so, the idea holds potential for the sake world in bringing non-junmai types back to the fold, and the rice-growing industry would benefit as well.

Making non-junmai using alcohol distilled from domestic rice, even domestic schlock rice, would not be cheap. Surely it would be more expensive than using imported sugar-cane based alcohol. But just as surely there is a market for such products.

And, equally as surely, there is a sector of the market that does not care, only cares about price, enjoys cheap sake – and deserves to have it. So to insist all sake be made in that way would not be fair to all brewers or all consumers. But I see a compromise.

What if cheap sake were to continue to use imported ethyl alcohol and premium sake, i.e. honjozo, ginjo and daiginjo, were to be limited to added alcohol made from domestic rice? This could be indicated on the label, just like the source of the rice.

While I think this is a great idea, it is clear there would be humongous challenges. It would be hard to Fermenting mash ("moromi")regulate or enforce. Brewers might be reticent to try this for a handful of reasons, from technical to image-related to economic. Many consumers might not be convinced, won over, or trusting. They may choose to stick with their junmai-only mentality – which of course is their prerogative.

Furthermore, sake brewers are – for the most part – an intelligent lot. Something tells me that someone somewhere along the line has thought of this. If it has not been realized, there must be a good reason. As an indication of this, there are a few brewers that distill their own junmai-shu and use that as the alcohol they add to their sake. So some experimentation has taken place, but nothing remotely resembling widespread adoption.

Finally, as almost all premium sake that is exported is of the junmai varieties, this is not a problem that will resonate with many. It is not exactly rocking the sake world. It is, however, an interesting potential solution that may present opportunities to a handful of challenges at once. It will be interesting to see how it all plays out over the next few years.

Toji Guilds: What do they do differently?

fune1One of the biggest factors contributing to the quality of the sake from a given kura is the skill of the toji, or master brewer, in residence therein. And while technical texts and other means of advice and support are much more available to brewers today then, say a century ago, the experience, intuition, and decisiveness of the person in charge is still of paramount importance.

It is probably fair to say, though, that the industry is less dependent on the various guilds of master brewers than they were back in the old days. And in fact, I myself have been seeing less (not zero, mind you, but less) significance in the differences between the various guilds themselves, beyond their formidable cultural and historical presence.

Sure, we hear about slight differences, like the Nanbu guild does it this way, but the Echigo guild does the same step another way. But in the end, the overall level of technical prowess is higher than it used to be, toji or no toji, guild or no guild. And so many other factors guide the decisions of any given toji – such as house style or modern consumer needs – that those little differences between the guilds get squashed in comparison.

Nevertheless, I am pretty sure there is a lot about sake brewing about which I have no clue, and recently learned a bit about some of the real technical differences in the way different guilds of toji brew, and teach their protégé.

The toji guilds are centered around old farming regions, and most of the toji of a particular guild would Shizukustay close to home. But as the number of guilds and therefore toji has declined drastically (many are gone for good, or have but a couple of members), those that have maintained their numbers begin to necessarily spread out a bit, practicing their craft in kura farther and farther from their main region. Also, as there are textbooks, computers and seminars these days, the differences between the gilds is less clear cut than it used to be, in terms of technology, methods, and logistics.

And so I found myself in Ishikawa Prefecture, on the Noto Peninsula, home to the Noto Toji Guild. It is a narrow strip of land so sparsely populated, mostly with tobacco farmers, that in some higher spots one can see water on both sides, a testament to how few buildings there are.

One brewer I was visiting, a tiny operation, had as their toji the son of the owner, destined to take over himself in due time. But oddly enough, due to some affiliation from university, he was affiliated with a totally different guild, the mighty Nanbu Guild, basically centered in Iwate way up north.

So here sat this Nanbu toji in the middle of the home town of Noto toji. While it may not seem like much in writing, I was surprised and impressed. In any event, this particular gent had the chance to speak with many a Noto Toji as he was surrounded by them, and that juxtaposition made for great conversation as we strolled around his kura.

I found one particular technical difference big enough to surprise me and encourage further discussion.

 

Men at workWhen brewing a tank of sake, after the yeast starter is prepared, it is mixed with more rice, enzyme-rich moldy rice called koji, and water, added in three separate doses over four days. After that, the resulting fermenting mash – called the moromi – is allowed to ferment away for from 20 to 35 days or so. As it goes about its fermenting business, the temperature in that tank will rise. The highest temperature it reaches can be anywhere from 10C to 18C, depending on the grade of sake and ten million other things.

It was explained to me by this Nanbu Toji surrounded by Noto Toji that the Nanbu guild liked to let that temperature run up freely and of its own accord. “It gives us the fine-grained, clear flavor we are famous for,” he explained. But the Noto guild prefers to hold that back, forcing the moromi to take as much time as is feasible to come up to that higher temperature. The words used to me were, “Osaete, osaete,” or “They hold it back, as if saying ‘Easy now, killer, easy now.’” As he explained to me, he held his arms out, palms facing me and pushing forward, as if holding back an invisible force. And again, there is a reason. “It gives them the full flavor and quick finish that is their trademark,” I was told.

The differences are quite significant. We’re not talking a day or two here, but more to the tune of a seven days. In other words, one school says the highest temperature can be hit in a week, another says hold it back and make it take 14 days or so. To me, having that much variance in the basic brewing methodology is surprising.

But they’re right. If left on their own to brew sake as they like (i.e. without owner or consumer “suggestions” or “guidance”), Nanbu toji-brewed sake is indeed clear and fine-grained. And without a doubt, Noto toji-made juice is quite full – until the end, when it cleans out astonishingly quickly.

Well, I initially chalked this up to his particular perception. But the next day I had the good fortune to visit another brewery, this one firmly ensconced in the region’s Noto toji hands. And as the evening’s discussion with that toji wore on, we returned to this point.

I began to describe to him what I had been told. “I have heard that the Nanbu toji let the temperature of the moromi run up freely, whereas you Noto guys tend to?” He cut me off at that point.

With his arms out, palms pushing toward me as if holding back an invisible force, he interjected “Osaete, osaete?” And added a bit more verbiage to the tune of “Easy now, killer, easy now. Gotta hold that puppy back a bit.” Not only did he know where I was going, the very words were the same. The gestures were too, for that matter. This kind of indicated to me just how deeply ingrained their thinking is on the issue. “It’s what gives our sake the full flavor yet clean finish Noto Toji are known for.”

I was impressed by not only the differences, but also by the acute awareness of those differences on the part of the journeymen themselves.

I reiterate, though, that these differences are likely less significant than they once were. Textbooks, computer-generated curves and the equipment to allow brewers to match them, and modern understanding of the processes have usurped much of the effect of those older, empirically driven methods. But still, the differences in the practices of the various toji guilds are alive, well, and infinitely interesting.

Batch Sizes: Various Philosophies

 

tanksThere are many things that determine how good a batch of sake will be. And there are equally as many opinions about each and every one of those things. Factors that some brewers consider indispensable or key, others will downplay or even outright contradict – if not diss – with opposite philosophies. Depending on your threshold for vagueness, it can either be frustrating or fascinating.

One of these factors is the size of the batch, or the “shikomi,” measured in kilos of rice that went into a given tank to create that batch of sake.

Perhaps typical is a ton to a ton-and-a-half (a metric ton, mind you, so 1000 kg or 2200 pounds) of the combination of the rice and koji (the rice that has had koji mold propagated upon it). But there are those of the opinion that much smaller shikomi, say 600 kg or so, are infinitely better for super premium sake.

Perhaps the smallest size I have seen is 500kg on a practical level, although smaller sizes exist as well. But done at this scale, yields are quite low. And brewers need to ask themselves, from an economical point of view, is it worth it in the end? When considering the time required to do each of the many steps, then have it take up tank space, press it and filter it when fermentation is complete, bottle it and care for it and more – it would be so much more economical to double, triple or quadruple your yields for true efficiency. And many, many breweries function at those larger economies of scale.

Naturally, though, at some point, the law of diminishing returns kicks in with a vicious vengeance and quality begins to noticeably suffer. But just where that occurs, and how each toji (master brewer) feels about it, varies hugely.

For example, some do not think that smaller is always better, citing the truth that it is much harder to DSC04422control parameters such as temperature in those smaller tanks over the long run. To achieve a given flavor and aromatic profile, brewers guide the moromi (fermenting mash) along a very tight temperature curve. Smaller batches are more subject to various factors that might send them out of spec, so to speak.

Conversely, a largish tank would lumber along so much more heavily that wild swings in temperature would not likely happen. But of course the counterpunch to this is that if your temperature and other parameters stray from the fold of the ideal, it is easy to bring them back into alignment with small batches, back to where you want them to be, whereas in big batches the sheer mass makes it harder to forcibly change the temperature once it has strayed.

But again: there are various philosophies. One hugely famous toji of almost unmatched accomplishment insists that larger batches of about 1.5 tons are ideal. He also insists on slightly customizing his tank dimensions, because by doing so the moromi mixes itself and he does not have to mess with using long poles to mix it up. It all occurs naturally in his kura as, inside the tanks, carbon dioxide bubbles stick to dissolving rice particles and the countless yeast cells, rising to the top, where the gas is released and the now-dense glob sinks again. And if your shikomi size is right, it all circulates perfectly, around and around and around…

One fact worth mentioning, however, is that almost always the more premium grades of sake are indeed made in comparatively smaller batches, at least compared to the shikomi size of the lower grades of sake for that brewer. And contest sake, too, is almost without exception made in smaller batches. But this surely arises from the aforementioned ability to tightly control key parameters.

Lately I have come across this information on the back labels of some sake bottles: they actually tell us the size of the shikomi.

Now what in the world are we supposed to do with this information? In the end, the flavors and aromas of a sake before us are either appealing, or they are not. Biasing our minds with such information before tasting will but encumber our enjoyment by unnecessarily prejudicing it.

taka-awaBut as always, there are a myriad of opinions. One big gun of a distributor in the Tokyo/Yokohama metropolis insists that a sake has to be made in a batch that is 600 kg or smaller to be decent. He cites his ten-year convincing effort focused on one famous kura to lower their shikomi size from a ton to 600 kg, and when they did, they won a major international award. True, the smaller shikomi size might have had something to do with it, but so might a gazillion other things. But hey, what do I know.

So enjoy your sake for its flavors and aromas. And should you come across the shikomi size, now you know its significance, and its potential liabilities.

Honjozo’s Demise and Statistical Skewing

Rice only sake = junmai-shuThe proponents of junmai types over added alcohol types are quick to point out how fast the junmai types are growing in production and consumption, and how fast the added-alcohol types are decreasing. And this is true enough; certainly the awareness of and preferences for junmai, junmai ginjo, and junmai daiginjo are growing steadily. Misplaced though the reasoning may be. (Did I just say that?)

But as always, there is bit more to the story than any one interpretation of static statistics states, alliteration fully intended.

For one, futsuu-shu, the 65 percent of the market that is all made with good dollops of added alcohol for economic reasons, continues to contract fairly quickly. However, even if we limit the analysis to premium sake, tokutei meishoshu (“special designation sake”), i.e. honjozo, junmai-shu, ginjo-shu, junmai ginjo-shu, daiginjo-shu and junmai daiginjo-shu, the junmai types grow faster than the non-junmai types.

Still, there is one caveat that is conveniently ignored: that of the enigma of honjozo. Why is this? Because it is indeed premium, although (oxymoronically) at the very bottom of premium. And it is contracting faster than any other type of sake, even lowly futsuu-shu.

And this makes the numbers appear the way they do. In other words, if you look at all premium sake together, sure, junmai types are growing faster than non-junmai types. But if you take out honjozo, then the non-junmai types are growing just as fast as the junmai types.

My point is not to prop up added alcohol sake, nor to diss junmai jihadists. (Did I just say that?) But rather, the point here is to show how fast honjozo is dropping, and to consider why that might be. And lastly, to propose that it might not be as bad as it looks.

Let’s look briefly at the history of honjozo. Adding pure distilled alcohol to sake has been around since 1942, when it was enforced with good purpose, to save rice during hard times yet to let the industry survive.

When things settled down in post-war Japan, all sake continued to be brTraditional rice steaming vatewed with added alcohol – most often for economic reasons. But along the way, brewers learned the great things that can happen to a premium sake by adding a bit of ethyl alcohol to the mash just after fermentation – and then a bit more water later. These include coaxing out more flavor and aroma from the rice, improving shelf life, and making the final sake smoother and more well-rounded. Then, in 1968, two breweries more or less simultaneously begin brewing junmai, after which junmai types s-l-o-w-l-y gained momentum that continues today.

Honjozo became an industry designation in the early 70’s, and means “the original brewing method.” Which it is not; but hey, there were on a roll. What honjozo does mean is that the amount of distilled alcohol added is strictly limited, with the spirit of the rule being to show that it is added for good technical reasons like those outline above, but not just to increase yields. Also, the rice must be milled to 70 percent of its original size as well. Back in the early 70s, before junmai caught on, and when heavily-doped futsu-shu was closer to being the norm, honjozo was considered a step above in terms of both brewing philosophy and quality as well.

However, as junmai and ginjo grew in popularity, the once-lofty honjozo began to lose it significance, and so it continues today.

Why might this be? Because it is, increasingly, in this no-man’s land between cheap sake and premium sake, at least in terms of marketability. It is not futsuu-shu, but nor is it ginjo. Consumers like extremes, and honjozo is neither here nor there in the opinion of many. Sad, but true.

In other words, if someone wants to drink cheap, honjozo is too expensive and too good. If someone wants to drink premium, honjozo is perceived as the lower end of that spectrum, and summarily passed over in favor of something with the hallowed ginjo word on the label.

ShizukuFrom the brewers’ point of view, it is pretty much the same. With jus a bit more milling of the rice, a brewer can classify it as a ginjo and benefit from all that fanfare and marketing. In fact, much honjozo was made with rice milled enough to qualify it as a ginjo anyway in the silly rice-milling wars commonplace today. So sometimes, all they really need to do is to decide to label it as a ginjo. Done.

Conversely, with just a bit less effort, a brewer can sell it as a futsu-shu, and a rather good one at that, giving it a distinct advantage on the shelf when compared with really cheap sake. So the benefits of labeling a sake as a honjozo began to fade away, and continue to do so.

To be sure, there is still plenty of great honjozo left, especially tokubetsu (special) honjozo. And much of it is some of my favorite sake to drink! Not overly fruity or aromatic, still tinged with idiosyncrasies, yet clean, smooth and pleasant. Not all of it, mind you; but much of it is so.

Alas, for these reasons, the contraction of honjozo will likely continue. But in truth, the sake itself is not going anywhere, it is just being reclassified as other stuff, either a notch up or a notch down, perhaps with slight tweaking. While it is a shame to see historically significant grade of sake dry up, I myself think that the sake that remains in that classification will even more aptly represent what good honjozo can be. And I, for one, am looking forward to continuing to enjoy them. Yet I also expect them to continue to skew the statistics.

Hiya Oroshi

Fall is Hiya-Oroshi time…and its lack of legal standing

Like almost anything consumable in Japan, sake has its seasons. Examples include warm sake in the winter, nama (unpasteurized) sake in the spring, slightly toned down chilled ginjo in the summer.

And overall, perhaps the best season for sake is the fall. Like, now. Just about everything seems to taste better in the autumn, especially in Japan. I dunno… maybe it is the mercifully cooling temperatures and dryer air, or perhaps it is the yellows, oranges and browns of the foliage. It may even be that so many varieties of fish express fuller and richer flavors once the fall sets in. Whatever the combination of factors may be, it is surely a great season for enjoying sake. In fact, it is one of the top four, methinks.

There is a special type of sake called hiya-oroshi that is released in the fall that has an irresistible charm to it. The word hiya-oroshi has its origins back in the Edo period (1604 to 1868). Back then, finished sake was stored in the large wooden tanks used for brewing. Normally, this sake had been pasteurized once (by heating it for a short time) before being put in these tanks for maturation. If the brewer needed to ship some out, they would have to pasteurize the sake a second time before putting it into small wooden casks – called taru – for delivery.

This is because the outdoor temperature was still high in the summer, which would allow the sake to Rice paddy sunsetbecome warm enough where dormant enzymes and the lactic bacteria that fed on them could both become active, potentially sending the sake awry. A second pasteurization permanently deactivates these enzymes and “dispatched” any bacteria present, removing that fear, but taking at least a bit of the zing of the sake along with it.
However, once it became cool enough in autumn, brewers could fill their taru from the storage tank without pasteurizing the sake, and ship it with no fear of it going bad. The lower temperatures of autumn ensured nothing bad would happen. Such sake – sold in the fall without pasteurizing a second time before shipping – came to be known as hiya-oroshi.
Hiya means cold, and oroshi means to lower something; in this case, sake was lowered from the tank into the taru.

Note that hiya-oroshi is technically the same thing as nama-tzume, i.e. the second of normally-two pasteurizations is foregone. But nama-tzume is a purely technical term whereas hiya-oroshi has a seasonal implication, i.e. it is only released in the fall.

The problem is, though, that the term hiya-oroshi is not a legal definition and is therefore open to variation from brewer to brewer. In other words, it’s the usual fun-and-games of the sake world: a term on a label means a particular thing – unless it doesn’t.

And, also typical of the sake world, the industry maintains the spirit of it all – what is important is intact, even if the details vary a bit. Almost always, hiya-oroshi will be slightly young and vibrant. That much is consistent from brewer to brewer.

But lately there has been a spate of totally unpasteurized hiya-oroshi out there. So while usually, by definition, the second of the two pasteurizations was skipped, some brewers skip both and ship hiya-oroshi as totally nama. And, in fact, I have even encountered some twice-pasteurized hiya-oroshi out there as well. Huh?

Why? Because they feel it suits their style better. How can they get away with this? Because hiya-oroshi is not a legal definition. In the words of Barbosa from Pirates of the Caribbean, “They’re more what you’d call guidelines than actual rules.”

Pour sakeHiya-oroshi – whether pasteurized just once as is traditional or not – often has a bit more of a fresh, lively taste to it than other sake. While not as brash as freshly pressed sake, there can be a slightly youthful edge to it because it has not been laid down as long as most sake has. Naturally, this varies greatly from sake to sake, and from kura to kura.

Furthermore, there has been a half-baked movement over the last decade or so to release all hiya-oroshi on September 9, a day known as sekku, recognized as a turning point in the seasons. But even amongst the regions that push this, no one has gotten everyone to agree to do that. As such, the dates on which it is released vary greatly as well. No matter. It is always about early September, and spreading it across a few days helps keep the hype restrained.

While mostly a local, fresh product that is widely available in Japan for a short period of time, some of it does get out to other places in the world as well. Look for it at a reputable sake shop near you.

Happy New Year!

While it is not January 1, it is July 1, the first year of the Heisei 27 Shuzo Nendo, or H27BY.DSC04418

There are fiscal years and calendar years. Often, these are different. Well, in the sake industry, they also have “brewing years,” or “BY.”

What’s the point? What’s the difference? Sake brewing begins in the fall and runs until the next spring, necessarily crossing into a new calendar year. In Japan, the fiscal year of most companies begins April 1, so it would straddle two fiscal years as well. So in order to capture one season cleanly – eliminating the need account for half-done batches et al – the B Y (brewing year) concept was formed.

If we were to use calendar years to refer to when a sake was brewed, saying for example a sake was brewed in 2014, well that could be February of 2014 or November of 2014. And these are two completely different brewing seasons, with different rice harvests, and maybe even different brewing personnel. Using the BY year eliminates that potential confusion.

DSC04422Note that different kura (breweries) have different scales of operation. Some brew lots more than others. Accordingly, when each kura stops and starts for the year varies hugely. The less the brew, the later in the year they begin, and the sooner they finish. Conversely, the larger brewers start earlier and earlier, some approaching late summer as their starting point, and approaching early summer (of the next year) as their wrap-up for the season.

As such, the brewing industry here recognizes July 1 as the first day of BY, and June 30th as the last. This way, the brewing season of all kura is caught neatly and cleanly between.

The “27” refers to the year Heisei 27, or 2015 in the Japanese calendar. So ring in BY27 with a glass of your favorite sake on this day, New (Brewing) Year’s day, 2015.
